We’re thrilled to feature a truly standout offering: Colombia – Finca La Sirena, a coffee that’s as innovative as it is delicious. Grown in Colombia’s Quindío region, this lot comes from the family-run Finca La Sirena, where producer Juan Puerta is using his background in food science engineering to push the boundaries of what coffee can be.
This particular lot uses a rare and experimental processing method called Osmotic Dehydration. After the cherries are pulped—similar to a traditional honey process—they're submerged in a hypertonic glucose solution. This creates osmotic pressure that gently draws out moisture while preserving the fruit’s structure. In this iteration, cherries and vanilla are introduced into the solution, infusing the coffee with layered flavor. The cherries are fermented (with or without their skins) in sealed tanks, then dried slowly over ten days until they reach just the right moisture content.
The result? A cup that’s vivid, layered, and almost nostalgic.
Flavor notes: cherry cola, vanilla, amaretto, and molasses.
It’s juicy, creamy, and just a little indulgent—like a cherry cola float, with a swirl of vanilla sweetness and rich, syrupy depth.
