Colombia’s Finca La Sirena- Mango, grown on a farm 1420MASL, goes through a process called Osmotic Dehydration. The harvested coffee cherries are co-fermented in sealed tanks before drying over 10 days (or until the moisture content is reduced to 10%). In this process, unroasted green coffee beans are fermented alongside non-coffee ingredients—in this case, mango—before being dried and milled. The goal of this process is to influence the bean's flavor profile.
